You've probably thought of these already, but just in case:

I'm assuming you're using your own server, can you ascertain why/what 
happened to cause the addresses to be unsubscribed? Do you keep mail 
logs of any description? If so, perhaps you could send subscription 
invitations to any addresses recorded, explaining what occurred.

Alternatively, is data recovery an option? If the mail program has 
unsubscribed and deleted the addresses they are almost certainly 
still on the server's HD. Depending on disk usage it will take time 
before they are gradually written over; right now they're probably 
just sitting there, marked as deleted by the system and the space as 
available for use. If you feel it's worth while, a data recovery 
service should be able to reclaim this information.
