The same thing happened to me a couple of days ago.
One day I had 1785 subscribers, the next day I had 2.

I think this was due to some small server glitch.

The solution? Simple. I contacted my web hosting
provider and asked them to retrieve a copy of
the file which stored the mailing list from a previous
backup.

Luckily, the file was backed up the night before.
Ok, so you may loose a few subscribers that subscribed
between times of backing up your site, but it's
better to lose a few than to lose the lot.

Any good web hosting provide will backup your site
on a REGULAR basis (by regular I mean every 24 hours
or every 48 hours) so hopefully you shouldn't have
any problems.

In future, ALWAYS keep a backup of the list yourself.
I save a copy of the mailing list on my home computer
every night. It's as simple as FTP'ing into the server
and downloading a copy of the list.

It can be a real life saver.
