It seems to me that Topica would serve your need nicely.
Subies can subscribe from a form you place on your site,
or an email link.  It's about as user friendly as it gets.
You can move your entire list to them quickly and easily
and they take care of all the unsubs automatically (this
can be a problem in that you lose the unsubs email address
unless you go to their site and make a copy of the list
occassionally for your own records).

I know from my previous post that many of the list members
here probably think am somehow associated with Topica.  Let
me assure one and all that my only affiliation with them is
that I use their service and am very happy with it.

It really shouldn't matter what kind of server you are
using because this works as a simple copy and paste
operations from your text editor to their server site.
