Probably the simplest way is to put a simple graphic image (a unique logo,
different from the one actually used at the site) into the email, but
calling it from the web-site (i.e.,  <img
src="http://www.wicce.com/images/newsletterlogo.jpg">, so that when you
review your stats log, you can see that newsletterlogo.jpg was called 483
times... which would be great if you have 427 subscribers (they  either
opened it more than once, or they forwarded it to others, increasing your
readership), or not so great if you have 892 subscribers!

(This isn't something *I* would do, but lots of folks do it).
