Hello All,
From a business or "professionalism" point-of-view,
the difference between single opt-in and double opt-in is QUALITY.

With the first you may get a lot of "numbers" but then have a 
lot of unsubscribes plus a lot of  accidental addressees - those 
who didn't mean to but inadvertently subscribed  - and now don't 
know how to or are too polite to unsubscribe.

With the double opt-in, this much you know: those who subscribed are
aware they did, and most probably want it - until you disappoint them.

If you just want to be able to say "I have xxxx number of subscribers",
single opt-in is fine. If you are building a long term business or 
community - then go for the solid "stayers" - with double opt-in.
