Single opt in is when someone signs up for your newsletter or list, and you send them a confirmation saying they have been added.

Double opt-in is when someone signs up for your list and you send an email asking for them to reply to confirm that they really did want the subscription. This is supposed to help in keeping down spam complaints by preventing third-party subscriptions.
