One of the things you could try is to send the email with a
"read-receipt" request.

So, the moment your email gets opened, you'll get back
an email from them to that effect.

But of course, it has it's minuses too. It can be considered
sneaky, unethical, intrusive, may not work on the reader's email
client, the reader may have disabled the feature, will not work
if your email is read off-line, and so on.
